Parmesan Crusted Salmon

with lemon roasted broccoli and asparagus.

What you’ll need
  • 2 salmon filets, skin on
  • 1 bunch of asparagus
  • 2 cups of broccoli florets
  • 1 lemon
  • 3 garlic cloves
  • 1 cup of whole wheat panko
  • 1/2 cup of parmesan cheese
  • 2 tbsp of fresh parsley

What you probably already have:

  • Olive Oil
  • Salt
  • Pepper
  • 2 sheet trays
  • 1 bowl
  1. Preheat your oven to 400 degrees.
  2. Rinse and dry fresh produce. Chop the bottom inch of the asparagus off and discard. In a bowl, toss broccoli florets and asparagus in olive oil and salt and pepper to taste. Add minced garlic and the zest of one lemon. Spread evenly on a parchment-lined baking sheet. Slice lemon in half and add it to the tray as well. Roast for 25-30 minutes or until desired doneness.
  3. Wash and dry salmon well. Mix breadcrumbs with parmesan and chopped fresh parsley. Brush salmon with a little bit of olive oil and press into crumb mixture. Spray with a bit more olive oil and place on a baking sheet. Roast for 20-30 minutes or until desired doneness.
