Honey-Glazed Roasted Carrots

Cook: 35 minutes
- Preheat your oven to 425 degrees.
- Line a baking sheet with parchment paper. In a bowl, toss the carrots with honey, two tablespoons of olive oil, fresh thyme, and salt and pepper to taste.
- Once well coated, arrange on the baking sheet in one even layer. Roast in the oven until brown and caramelized, about 30-35 minutes.
- Serve warm or at room temperature.
