Honey-Glazed Roasted Carrots

Cook: 35 minutes
  1. Preheat your oven to 425 degrees.
  2. Line a baking sheet with parchment paper. In a bowl, toss the carrots with honey, two tablespoons of olive oil, fresh thyme, and salt and pepper to taste.
  3. Once well coated, arrange on the baking sheet in one even layer. Roast in the oven until brown and caramelized, about 30-35 minutes.
  4. Serve warm or at room temperature.
